
Ingredients
(Serves 4)
For the chicken:
1 lb chicken breast
1 tbsp olive oil
½ tsp salt
½ tsp paprika or smoked paprika
½ tsp italian seasoning (optional)
For the pasta:
8 oz whole grain rotini
Salt for boiling water
For the sauce:
2 tbsp olive oil
1 tsp minced garlic
1 cup milk
¼ cup grated parmesan cheese
¼ cup chipotle in adobo sauce
½ cup reserved pasta water (as needed)
INSTRUCTIONS:
1. Cook chicken:
Season and sear in olive oil until golden and cooked through. Slice.
2. Cook pasta:
Boil in salted water; save ½ cup pasta water.
3. Make sauce:
Melt butter, add garlic, milk, cream, cream cheese, parmesan, and chipotle. Stir until smooth.
4. Combine:
Toss pasta and chicken in the sauce. Add pasta water to thin it if needed.
5. Serve:
Garnish with extra parmesan or parsley.
