Ingredients

(Serves 6)

1 ½ lbs boneless skinless chicken breast, cooked and shredded 

2–3 chipotle peppers in adobo sauce, minced 

2 tbsp adobo sauce 

½ cup plain Greek yogurt 

1 lime, juiced 

1 tsp garlic powder 

1 tsp smoked paprika 

Salt & pepper to taste 

1 cup reduced-fat shredded pepper jack cheese 

1 avocado, sliced 

1 tomato, thinly sliced 

¼ cup red onion, thinly sliced

12 slices whole wheat bread or 6 sandwich thins 

Cooking spray or light olive oil spray 

 

Optional Add-Ons

Spinach or arugula 

Cilantro 

Pickled jalapeños 

INSTRUCTIONS:

1. Make the Chipotle Chicken Mixture
In a bowl, combine shredded chicken, chipotle peppers, adobo sauce, Greek yogurt, lime juice, garlic powder, smoked paprika, salt, and pepper. 

 

2. Assemble Sandwiches
Layer chicken mixture, cheese, avocado, tomato, and onion onto bread or sandwich thins. 

 

3. Grill the Melts
Lightly spray the outsides with cooking spray. Grill on a skillet or panini press over medium heat for 3–4 minutes per side until golden and melty. 

 

4. Serve Warm
Pair with a side salad, roasted veggies, or fresh fruit.
