Ingredients (Serves 4)
For the salad:
1 small green cabbage, finely chopped
1 cucumber, diced small
3 green onions, sliced
¼ cup chives (optional)
Tortilla chips
For the dressing:
1 cup basil leaves
1 cup spinach
2 garlic cloves
2 green onions (whites)
½ cup olive oil
¼ cup rice vinegar
Juice of 1 lemon
¼ cup walnuts/cashews (optional)
¼ cup Parmesan or nutritional yeast
Salt & pepper to taste
INSTRUCTIONS:
1. Chop cabbage, cucumber, and onions into small pieces.
2. Blend all dressing ingredients until smooth.
3. Toss veggies with dressing, chill 20 minutes.
4. Serve with tortilla chips for dipping or on the side.
