
Ingredients
(6 servings)
12 oz whole grain soba noodles (dry)
1 ½ lb lean ground beef (90% lean or higher)
6 cups fresh broccoli florets (bite-sized)
1 tablespoon canola oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated (or 1 tsp ground ginger)
Sauce
¼ cup low-sodium soy sauce
2 tablespoons low-sodium beef broth
1 tablespoon rice vinegar
1 tablespoon honey or brown sugar
2 teaspoons cornstarch
¼ cup water
INSTRUCTIONS:
1. Cook the Noodles
Bring a large pot of water to a boil.
Cook soba noodles according to package directions until tender.
Drain and set aside.
2. Cook the Broccoli
Steam broccoli florets for 3–4 minutes until bright green and slightly tender.
Do not overcook.
Set aside.
3. Brown the Beef
Heat canola oil in a large skillet or tilt skillet over medium heat.
Add ground beef and cook until browned (internal temperature 155°F for 15 seconds).
Drain excess fat if needed.
4. Add Aromatics
Stir in garlic and ginger. Cook 30–60 seconds until fragrant.
5. Prepare Sauce
In a small bowl, whisk together soy sauce, beef broth, vinegar, honey, cornstarch, and water until smooth.
6. Combine
Add steamed broccoli and cooked noodles to the beef mixture.
Pour sauce over the top and stir gently to coat evenly.
7. Simmer
Cook for 2–3 minutes until sauce thickens and evenly coats noodles and vegetables.
8. Serve
Portion approximately 1 ½ cups per serving.
Hold hot at 135°F or higher until service.
