Ingredients

(Serves 4)

2 lbs chicken breast, cut small

chili powder, paprika, cumin, garlic powder, salt, pepper

2 cups corn (frozen is fine)

small bunch cilantro, chopped

1 lime

cotija cheese

¼ cup mayo

¼ cup Greek yogurt

 chili-lime seasoning

cooked rice (about 3 cups)

INSTRUCTIONS:

1. Cook chicken
Season chicken with chili powder, paprika, cumin, garlic powder, salt + pepper. Add a little oil. Cook in skillet on medium-high until browned + cooked through.
 

2. Make sauce
In a small bowl mix: mayo + Greek yogurt + squeeze of lime + a bit of Tajín.
 

3. Make street corn mix
In a bowl mix corn + cilantro + squeeze of lime + cotija.
 

4. Assemble bowls
Add in the rice, chicken, corn mix and drizzle sauce on top.
