Ingredients
1 cup uncooked brown rice
2–3 cups water
2 cups of 1% milk
¼ cup sugar/agave
½ cup pumpkin puree
1 tsp pumpkin pie spice (or vanilla)
1 cinnamon stick (optional)
INSTRUCTIONS:
1. Cook the rice in water (with a cinnamon stick, if using) until tender.
2. Add milk and sugar/agave, then simmer until slightly thickened.
3. Stir in the pumpkin puree and pumpkin spice (or vanilla), and cook until creamy.
4. Serve warm or chilled, and sprinkle cinnamon on top if desired.
