
Ingredients
(Serves 6 - 1 quesadilla per person)
1½ lb boneless, skinless chicken breast or thigh, cooked and chopped
⅓ cup BBQ sauce
2 tbsp of honey
1½ tsp of garlic powder (or 1 tbsp fresh minced garlic, sautéed)
1 tbsp olive oil
1½ cups of low-fat shredded mozzarella
6 10-inch flour tortillas
Optional add-ins: thin-sliced red onion & chopped cilantro
INSTRUCTIONS:
1. Prepare the chicken
In a bowl, combine cooked chicken, BBQ sauce, honey, garlic, and olive oil. Mix until evenly coated. Taste and adjust sweetness.
2. Assemble
Lay out tortillas. Evenly spread chicken mixture over half of each tortilla. Sprinkle cheese on top, then fold tortillas in half.
3. Cook
Heat a dry griddle or skillet over medium heat.
Cook quesadillas 2–3 minutes per side until golden and cheese is melted.
Cut each quesadilla into wedges.
