
Ingredients
(Serves 4)
4 chicken breasts, sliced
2 tsp chili powder
2 tsp smoked paprika
1 tsp garlic powder
1 tsp cumin
Salt & pepper
2 tbsp oil (avocado or olive)
4 cups cauliflower rice
2 tbsp butter or oil
1 cup chopped zucchini (or roasted cauliflower)
2 tbsp mayo
2 tbsp sour cream or Greek yogurt
2 tbsp lime juice
1 tsp chili flakes (or 2 tsp sriracha)
Shredded lettuce or cabbage
Pico de Gallo
1 avocado, sliced
Cilantro
Lime wedges
INSTRUCTIONS:
1. Cook chicken:
Season chicken with spices + salt/pepper. Cook in oil for 6–8 minutes until browned.
2. Cook cauliflower rice:
Sauté in butter/oil for 2–3 min, season with salt/pepper.
3. Make Baja veggies:
Mix zucchini, mayo, sour cream, lime, and chili powder.
4. Make hot honey:
Mix sugar-free honey with chili flakes + lime juice.
5. Assemble bowl:
Layer cauliflower rice → lettuce → chicken → Baja veggies → pico → avocado → cilantro.
6. Finish:
Drizzle hot honey on top and serve with lime wedges.
