Ingredients

4 cups diced Sweet Potatoes

2 tbsp olive oil

1 tsp chili powder

1 tsp paprika

1 tsp garlic powder

Salt & pepper, to taste

1 lb ground beef (or turkey/chicken)

1 packet taco seasoning (or homemade mix)

1 cup shredded cheese

1 cup salsa or Pico de Gallo

1 cup shredded lettuce

½ cup sour cream

½ cup guacamole (optional)

Fresh cilantro or green onions, for garnish

INSTRUCTIONS:

1. Roast Sweet potatoes: Toss diced sweet potatoes with olive oil, chili powder, paprika, garlic powder, salt, and pepper. Roast at 425°F for 25–30 min until crispy, flipping halfway. 
 

2. Cook taco meat: Brown ground beef in a skillet, drain, stir in taco seasoning + a little water, and simmer. 
 

3. Assemble bowls: Divide crispy potatoes into bowls. Top with taco meat, cheese, salsa, lettuce, sour cream, and guacamole. 


4. Garnish & serve with cilantro or green onions.
